Yanagiba or Deba, for what?

Yes, upon request. By default, single-bevel blades are designed for right-handed users; left-handed versions are made to order by Masamoto.

No. Shirogami No. 2 is a carbon steel. After use, wipe dry and occasionally treat with mineral oil to keep the blade protected.
