69 layers

The 69-layer series is the core of the Damascus line and the series from which the brand's bestseller comes: the 69-layer Kamagata 18 cm.

Each blade has a total of 69 layers of rust-resistant damascus steel, including the special VG10 core from Takefu, hardened to 63 HRC. The blades are forged by Saruwata Hideaki in Seki. The handle is European-shaped and made of wenge wood, the blade is matte polished and thinly ground.

The series ranges from the Kamagata to the Gyuto to Slicers, Kiritsuke, and Petit, making it a versatile all-rounder for everyday use. Those who start here get a rust-resistant, easy-care blade that cuts precisely every day and makes the transition to Japanese knives easy.

Frequently Asked Questions about the 69 Layer Series

What distinguishes the 69 Layers series from the Gold Damask series?

The 69-layer series has a VG10 core at 63 HRC and is the versatile all-rounder for every day. The Gold Damascus series uses a harder SG2 powder steel core at 64 HRC with a total of 101 or 141 layers and aims for particularly long edge retention.

Which model is suitable for beginners?

The 69-layer Kamagata 18 cm. It is the best-selling all-rounder for vegetables, meat, and fish and features a European-shaped handle, making the transition easier.

What does VG10 mean?

VG10 (β€œV Gold 10”) is a stainless steel originally developed by Takefu Special Steel in Fukui Prefecture. Because the name is not protected, significantly cheaper knives also bear the designation, often with replicated steels. ISSHO TABERU uses the original Takefu steel: It forms the hard core of the blade at 63 HRC.

Is the VG10 core rust-free?

Yes. VG10 is a rust-resistant steel. This makes the series one of the easy-care lines; simply drying it by hand after use is sufficient.

How do I care for a 69-layer knife?

Wash by hand and dry immediately, never in the dishwasher. Ideally, cut on a natural wood board. Sharpen with a Japanese whetstone; re-sharpening is free for ISSHO TABERU knives.
